Monday Message - Potato Skin

Red, Gold, Sweet, Purple.....get  the Potato Facts from Kids Eat Right. Do not undress your potato. Instead, savor the skins by roasting potatoes and reap the benefits of the natural vitamins and minerals from the earth.  Another option, leave the skins on while you dice those potatoes before cooking to mash them up with flavorful herbs.
