Mondays are not necessarily our "meatless" days but we strive to have several meatless meals at breakfast, lunch and dinner throughout the week. Beans are a staple in our home and tofu makes a special appearance every now and then. Filling our plates with veggies, ancient grains and natural cheeses work well too in keeping our bellies satisfied.
